John's Slow Cooked Red Chili Turkey from the NY Times

Sylvia's Tempeh Chili

Ingredients:
2 tablespoons olive oil
1 large yellow onion, diced
8-ounce package tempeh, crumbled
1 large green bell pepper, diced
1  large red pepper, diced
1  large yellow pepper, diced
2 cloves garlic, minced
2-15 oz can diced tomatoes
2-15-ounce can kidney beans, drained
1 teaspoon cumin
2 teaspoons chili powder

Preparation:
Heat oil in a large pot over medium high heat. Add tempeh, bell peppers, garlic and salt and cook, stirring often, until the peppers are softened, about 5 minutes. Add beans, tomatoes, 1 cup water, chili powder, cumin and and simmer, covered, until flavors meld, about 30 minutes.
